El Jolgorio Pechuga is the expression that most directly connects the modern mezcal movement to the ancient traditions of Oaxacan village life — a spirit that can only be made for special occasions and that carries the essence of celebration in every drop. Unlike the other expressions in the El Jolgorio lineup which are named for their agave variety, Pechuga is named for its extraordinary production method — a technique that dates back centuries and remains one of the most unusual and culturally meaningful in all of Mexican spirits. Produced from 100% semi-wild Agave Espadín harvested at ten years of age by Mezcalero Valentín Cortés and Gregorio Martinez Jarquin in Santiago Matatlan, Oaxaca — pit-roasted, tahona-crushed, open fermented, and double distilled in traditional copper pot stills. During the second distillation the mezcalero adds locally harvested fruits and spices — pineapple, orange, plantains, limes, apples, and pears — and then hangs a raw breast of Guajolote, a creole turkey rooster, inside the still so that all the vapor must pass over the meat before condensing into liquid. The result is one of the most complex and layered mezcals that El Jolgorio produces. Distiller describes it as aromatic and spicy with full-bodied agave flavor that gradually gives way to botanical notes on a very long finish — don't worry, it doesn't taste like poultry.
