Made with biodynamic Pinot Gris grapes from Keeler Vineyards in Oregon, it’s crafted in-house at Matchbook, with half of the wine distilled into eau-de-vie to strengthen the base. The botanicals are a unique blend, featuring Timur Pepper—a citrusy, complex relative of the Sichuan peppercorn from the Himalayas—and local elderflower from Briermere Farms on the North Fork (the same place famous for its fruit pies). Crisp and dry, it’s perfect for a distinctive Martini, while the elderflower adds a touch of floral sweetness, making it an ideal match for a refreshing spritz.
