Krystle and Jason Jorgensen founded their grain-to-glass distillery in Healdsburg in 2012, a small family operation amid some of the best wineries in the land, and their Harvest Gin is already unusual — a seasonal, once-a-year release made from aromatic white wines fermented and pressed at the distillery, distilled in direct-fire copper alembic pot stills to preserve the grape aromatics, then run through a column still with the botanicals vapor-infused: locally harvested California bay laurel and wild fennel alongside juniper and a supporting cast. For the Barrel edition, that gin rests in French oak barrels, which lend a pale gold color and a layer of vanilla, soft spice, and gentle tannin over the floral base. Expect white flowers, fennel, and bay leaf on the nose softened by toasted oak and vanilla, opening into a rounder, warmer palate where the grape-based spirit's natural softness meets the barrel's structure, with juniper and herbs still clearly present, finishing longer and smoother than the unaged Harvest Gin.
