Scott and Rebecca Harris founded the distillery in Purcellville, Virginia in 2009 — the first legal distillery in Loudoun County since Prohibition, certified organic and kosher, surrounded by thirty wineries in the heart of Virginia wine country — and the same 100% organic rye base that goes into their acclaimed Roundstone Rye is twice distilled and then macerated with a secret recipe of ten organic herbs and spices, among them juniper, coriander, anise, cinnamon, and orange peel. Named for the Chesapeake Bay watershed, into which Catoctin Creek flows, and bottled at 46% ABV. Drinkhacker found a fresh, bright aroma of dry juniper, sweet citrus, and exotic florals, with the organic rye at its core showing through as black pepper spice, cereal sweetness, and chalky minerality, then a wonderfully rounded palate with a full mouthfeel, creamy texture, and warming minty spice. The Gin Is In called it an interesting, almost cerebral gin — straw-like and peppery with caraway, a jammy hint of hibiscus and blueberry, juniper and cassia up front, coriander and earthy musk, a lemon note mid-palate, and a rich woody finish; contemporary in flavor but traditional in feel.
