Made with crystallized brown sugar from tall cane Hawaiian-grown sugarcane that is hand harvested and crushed in the field — the juice collected in a tank and brought straight to the distillery, as fresh as sugarcane can be — then twice distilled in a vintage 1,210-gallon copper pot still and cut with pure mountain rainwater from Mount Wai'ale'ale slowly filtered through volcanic strata. Not in the style of dark rums that knock you over with overwhelmingly strong flavors and spices — instead easy to sip, the gentle spiciness working very well in cocktails.
