Burrito Fiestero is mezcal from Durango, Mexico's northernmost mezcal state — made by a rancher who loved mezcal, had a mountain full of wild cenizo agave, and went to the best family in Oaxaca to learn how. Mezcal PhD tells the story: Bildo, back home on his family's cattle ranch in the Durango sierra, proposed a partnership to Asís Cortés of El Jolgorio — he'd bring the land and agave, the Cortés family would bring the expertise — and Asís, his father Valentín, and his uncle Rolando made the trip north to build it. The Ancestral Joven is made the old way: wild, twelve-year cenizo (Agave durangensis) at peak sugar, hand-harvested, cooked 72 hours in a volcanic-rock pit oven, crushed, fermented with mountain spring water and airborne yeast in open wooden tanks, and double-distilled with the fibers in small stills — the ancestral category requires clay-pot distillation and no mechanization; check your label for the batch's specifics and ABV, typically around 42 to 46%. Agave Spirits Journey found light campfire-ember smoke, a funky aged-cheese note like parmigiano, fresh-cut grass, tropical fruit rind, and a cinnamon spice from the roasted agave, with a viscous, glass-coating mouthfeel.
