Derrumbes Durango is norteño mezcal — from Mexico's northernmost mezcal state, made from the agave that defines it. Derrumbes is a mezcal atlas, one bottle per state, and Durango's comes from Nombre de Dios, a colonial town in the high desert plateau, made from cenizo — Agave durangensis, the gray-blue, wild-growing agave endemic to Durango's dry sierra — pit-roasted, crushed, naturally fermented, and distilled in the region's traditional refrescadera stills, a clay-and-copper design with a cold-water refreshing basin that's distinct from both Oaxacan copper alembics and clay ollas.
