Fidencio Ensamble Mezcal

Ensamble is Fidencio's blend — two or more agaves roasted and fermented together, the traditional way Oaxacan palenques stretched scarce wild magueys with espadín. Fidencio Jiménez began making mezcal over a century ago in Santiago Matatlán, the world capital of mezcal, and the palenque is now run by his great-grandson, fourth-generation maestro Enrique Jiménez; the family also makes El Buho. The Ensamble marries estate espadín with wild agaves from the family's hillsides — check your label for the varieties and proportions of this lot — roasted in an earthen pit, crushed by tahona, fermented with native yeast in pine vats, and double-distilled in a wood-fired copper alembic, bottled at still strength. An ensamble gives what neither agave does alone: expect the espadín's honey, vanilla, and earth layered with the wild agave's herbal, mineral, or floral edge — green pepper, citrus, and wet stone — over a gentle smoke, opening into a balanced, medium-bodied palate with more complexity than the Clásico and more approachability than a single wild maguey, finishing long and peppery.
