Elote was the signature recipe of Aquilino García López — one of the most revered mezcaleros of his generation, who died in 2020 — and his sons Temo and Mateo carry it on in Candelaria Yegolé. Mezcal Vago was founded in 2013 by Judah Kuper, who married into the García family, and it bottles single-maestro mezcals with the producer's name on the label and the batch details on the back. Elote is espadín roasted in an earthen pit, crushed by tahona, fermented in pine vats, double-distilled in copper, then distilled a third time with toasted sweet corn that's been infused for a week — the corn-pechuga tradition of the Yegolé hills — triple sediment-filtered, and hand-bottled at around 50% ABV; Difford's lists 50.2%, and each batch varies. The spent mash is made into the paper for the label. Let's Drink It found a smooth, sweet aroma with real depth, charred wood and chocolate in the background. Mezcal Reviews' tasters find the corn up front, through the palate, and onto the finish, with pepper and sweetness — and one, who loves Aquilino's espadín and mexicano, found the corn sat on top of the agave rather than blending into it.
