Altos Esteres — "high esters" — is Alambique Serrano's answer to Jamaican funk, and it's unaged, cask strength, and unlike anything else from Mexico. The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa María Tlalixtac in Oaxaca for three generations, since German immigrant Max Krassel started with a handmade still on a coffee farm in the 1930s; today brothers Rommel, Axel, and William run the stills. This Second Edition starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills carried by mule, then run through an extended wild fermentation in pine and steel vats designed to build ester count before distillation on the family's custom pot and column stills. It's bottled straight off the still at 69.9% ABV with nothing added and no aging at all. Expect a wildly aromatic nose of aloe vera, watermelon agua fresca, madonna lily, stewed plantain, raspberry marzipan, cinnamon candy, and orange oil, opening into a burst of tropical fruit with lime zest, watermelon, and cucumber — funkier and more aromatic than the rest of the range, a peer to good Jamaican pot still rum but in a drier, more savory register.
