Tres Maderas — "three woods" — is Alambique Serrano's fourth blend, and its defining cask is one almost nobody uses: acacia. Alongside rum matured in French oak and American oak, the Krassel brothers included a portion aged in acacia wood, a cooperage tradition more familiar from Italian grappa than from rum, and married the three into something herbal, earthy, and dry. The family has distilled sugarcane spirit on the steep hillsides of Santa María Tlalixtac in Oaxaca for three generations, since German immigrant Max Krassel started with a handmade still on a coffee farm in the 1930s; today Rommel, Axel, and William Krassel run the stills. Everything starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills carried by mule, fermented with wild yeast in pine and steel vats, distilled on custom-built column and copper pot stills, and aged across environments from dry mountain bodegas to humid riverside cellars. Bottled at cask strength, 59.1% ABV, no additives. The Auditor called it a great rum whose flavors sound strange but really work — fruit as the backbone, spices rounding it out — and RumRatings tasters score it 8.0. Expect fresh cane and green herbs on the nose with honey, dried fruit, and a floral acacia sweetness, opening into a dry, earthy palate of orange peel, cinnamon, walnut, and resinous wood, finishing long with a cooling herbal edge.
