Angel's Envy Triple Oak Bourbon Whiskey

Triple Oak is Angel's Envy's first new permanent bourbon in over a decade, and the first one not finished in a wine or spirits cask. Master Distiller Owen Martin took the house bourbon — a 72% corn, 18% rye, 10% malted barley mash aged four to six years in #3 char new oak, now mostly distilled in-house in Louisville — and split it three ways: about six months in second-fill Hungarian oak, six months in new Chinquapin oak from Kentucky, and three months in new French oak, the most assertive of the three. He got the Chinquapin idea from tasting a Teeling Irish whiskey, and expected caramel and vanilla — he found a whole unique set of flavors instead. The three are blended, Hungarian-heaviest, and bottled at 92 proof. Robb Report called it a great whiskey — nutty, sweet, and spicy, with tannic spice and sweetness layered over a solid base bourbon, and just a kiss of heat. Breaking Bourbon found a surprisingly intense, savory nose of aged and toasted oak, brown sugar, dense dark fruit, dry leather, and pipe tobacco, with oak arriving in waves. VinePair: leathery but surprisingly floral, rosewater, caraway, fennel, then creamy hot chocolate and toasted oak — finishing like a bourbon much older than five years, though a touch thin at 92.
