El Dorado 21 is, in Inu A Kena's words, old enough to drink itself — and unlike the age-statement games elsewhere in rum, every drop is at least twenty-one years old. Demerara Distillers Limited makes it at the last distillery in Guyana, at Plantation Diamond on the Demerara River, where the country's heritage stills were consolidated: the 21 is a blend of rums from the Enmore wooden Coffey still, the Port Mourant double wooden pot still — the oldest working still in the world — and the Versailles single wooden pot still, tropically aged a minimum of twenty-one years in ex-bourbon oak, an angels' share that claims most of the cask, and bottled at 43% ABV. Since 2020 DDL has reformulated the range with the added sugar removed. Inu A Kena scored it near-perfect: much drier, oakier, and more complex than the bright, sweet 12, with a smoke the younger rums don't have — another fine sipping rum from DDL, and if you can grab a bottle, grab it.
