Jacob's Well is a marriage of fifteen- and sixteen-year Kentucky straight bourbons from Jim Beam at 108 proof — The Whiskey Wash scored it 9 out of 10 — named for Jacob Beam, who sold the family's first barrel in 1795. Hardin's Creek is Beam's limited series from eighth-generation master distiller Freddie Noe, launched in 2022 with two releases: Colonel James B. Beam, a two-year made the old way, and Jacob's Well, the oldest bourbon Beam had put in a bottle in years. It blends fifteen-year traditional-mashbill Beam bourbon with sixteen-year high-rye stock, both from the Clermont and Boston warehouses, and bottles at 108 proof with no chill filtration. The Whiskey Wash: coppery amber, grapes with apple and pear slices, bright lemon oil, and baking spice on a fruit-forward nose; nutmeg and star anise leading into cocoa nib, coffee, leather, tobacco leaf, and black pepper on the palate; and a finish of oak, dried apple, and lingering pepper. Drinkhacker and Paste both ranked it well above its sibling. Honest note: fifteen-plus-year Beam is rare — Knob Creek 15 and this are essentially the only ways to buy it — and the older stock shows as fruit and spice rather than the peanut note Beam is known for.
