This is a single barrel of Hirsch bourbon picked by Del Mesa Liquor and Chips Liquor — two Kentucky mashbills blended, returned to the barrel for a year to marry, and bottled uncut at 109.4 proof. Hotaling & Co., the San Francisco house behind Old Potrero and Junipero, revived the Hirsch name in 2020 — the label once attached to the $8,000 A.H. Hirsch Reserve — and The Single Barrel is its private-selection program: 70% of a 74% corn, 18% rye, 8% malted barley bourbon and 30% of a 72% corn, 13% rye, 15% malted barley bourbon, aged in new American oak, blended, put back into one barrel to mellow for a year, and bottled from that barrel at 54.7% ABV — 109.4 proof, high but approachable. The pick notes: a nutty, spicy nose with root beer and a hint of tobacco, and cashew butter, sarsaparilla, and soft stone fruit on the palate. Expect the sweet, sassafras-and-nut character the two mashbills produce together, a rich texture from the year of re-barreling, and a long, warm, spiced finish — fuller than The Horizon, gentler than The Cask Strength.
