The Jamaica ITP 2007 is all-molasses, medium-ester rum from Long Pond in Trelawny Parish — the ITP marque, one of the estate's mid-range fermentation recipes — open-air fermented, distilled on a pot still, fully tropically aged fifteen years in ex-bourbon oak in Jamaica, and bottled in New York State in 2022 at 56% ABV with no sugar, color, or flavoring. RumX scores it 8.4. Holmes Cay's notes: pepper and papaya on the nose, tropical fruit, clove, and leather on the tongue, and a finish of leather and baking spice. Fifteen tropical years on Jamaican pot still is a long time — the funk mellows into something savory and deep rather than wild: expect overripe fruit, papaya, and a gentle glue-like ester on the nose over dark caramel and toasted oak, opening into a dense, dry, spiced palate of tropical fruit, clove, leather, and tobacco, finishing very long.
