Jefferson's Tropics Aged in Humidity Bourbon Whiskey

Jefferson's Tropics was shipped to Singapore and left for eighteen months in 84% humidity, then brought home — Breaking Bourbon gave it 4 out of 5 and said there's just something about it that makes you keep coming back. Trey Zoeller, whose family has made whiskey in Kentucky since the 1790s, founded Jefferson's in 1997 and has been aging bourbon in strange places since the Ocean program began in 2012; Tropics is the humidity experiment. Kentucky straight bourbon was aged on land, shipped to Singapore in July 2019, held eighteen months in a tropical warehouse where heat and near-constant humidity push the spirit into the wood and hold the water in, returned to Kentucky in March 2023, and bottled at 104 proof. Breaking Bourbon: caramel, vanilla, and pepper with unusual fruit on the nose; tobacco, baking spice, and bright summer fruit on a creamy palate; and a finish of cinnamon, nutmeg, allspice, refined tobacco, leather, and brown sugar — a savory-yet-fruity thread running through all of it. The Whiskey Wash and Bourbon Culture both found a bourbon that tastes older than its age and unlike anything from a Kentucky rickhouse.
