Booker Noe created Knob Creek in 1992 as the first of Beam's Small Batch Collection, a pre-Prohibition-style bourbon aged nine years at 100 proof; the 15 Year is Beam's traditional mashbill — roughly 75% corn, 13% rye, 12% malted barley — aged fifteen years, small-batched, and bottled at 100 proof.
