1787 Provenance is the flagship release from Middleburg Barrel Company, a brand launched in 2025 by Viyas Sundaram (also behind The Bourbon Concierge and the revival of D.C.'s historic Fountain Inn) alongside Principal Whiskeymaker Jay West — better known in whiskey circles as T8ke, a former critic who reviewed over a thousand expressions before turning to blending and barrel selection himself. West hunts down individual barrels from Kentucky distilleries (this one distilled in Bardstown), then ages them further in newly built rickhouses on the 121-acre Provenance Estate in Middleburg, Virginia. This 7 Year Single Barrel — Barrel #14 — is bottled at cask strength, 107 proof (53.5% ABV), and earned a Master Medal at the 2024 American Whiskey Masters. Independent reviewers have been genuinely impressed: expect a classic amber color with buttery graham cracker and honey on the nose, layered with baking spice, toffee, and dried red fruit, moving into a medium-bodied palate of clove, black pepper, and toasted honey sweetness, finishing oily and dry with lingering baking spice.
