The distillery sits in a valley at Macouba on the flanks of Mont Pelée at the northern tip of Martinique, where Jean-Marie Martin bought the Fonds-Préville estate in 1845; the house calls its volcanic soil the best terroir on the island and runs its own on-site cooperage, which is the point of this bottle. Master blender Karine Lassalle uses the cooperage to carry out a double-char process on American oak barrels, toasting them at two levels — intense and extreme — then blends three-year-old rhums from those casks to capture, in the house's words, the terroir of the volcano, bottled at 48% ABV with nothing added under the AOC.
