Siembra Valles Aniversario Joven Tequila

Siembra Valles is David Suro's lowland tequila, made at Destilería Cascahuín in El Arenal, NOM 1123, one of the most respected family distilleries in the Tequila Valley. The Aniversario series is Siembra's once-a-year release of something unusual, and this Joven is the first of its kind for the brand: a two-month reposado rested in both American and French oak, blended back with unaged blanco from the same distillery, bottled at 41% ABV. The portrait on the label is Salvador Rosales Briseño, the founder of Cascahuín, whose grandson Salvador Rosales Torres runs the stills today. The tequila underneath is made the old way, without shortcuts: estate blue Weber agave slow-cooked in a wood-fired brick oven, crushed on a roller mill, fermented in open brick tanks with the distillery's own house yeast, and distilled in stainless stills with copper coils so every drop touches copper. The result carries Cascahuín's signature: rich cooked agave, a mineral, earthy backbone, and just enough oak from the short rest to add vanilla and soften the edges without covering the agave. A limited anniversary bottling, and once it's gone the next Aniversario will be something different.
