Thomas S. Moore founded the Bardstown distillery in 1889 that Sazerac runs today as Barton 1792, home of the 1792 bourbons; the Thomas S. Moore line, launched 2020, is Barton's extended-finish project — the 1792 high-rye recipe, fully matured in new charred oak, then given the longest wine-cask finishes in mainstream Kentucky bourbon. The Chardonnay spends two to five years in white-wine casks and bottles at 97.9 proof. Drinkhacker: unexpectedly savory, roast beef and toasty oak on the nose; meaty on the palate with butterscotch and a cigar-box finish — a bit too savory for the reviewer. Barrel Brothers and Adventures in Whiskey found the Chardonnay as buttered oak, white fruit, and a creamy texture over the rye. Expect the strangest of the three — buttery, oaky, umami — white-wine oak rather than fruit sweetness. Honest note: the Chardonnay is the one nobody else makes and the one that splits the room — for the drinker bored of port finishes, the white-Burgundy fan, and the Thomas S.
