Vino Chinato is one of Piedmont's most venerated traditions — a fortified, aromatized wine sitting stylistically between vermouth and amaro, with quinine-rich cinchona bark ("china" in Italian) as the defining bittering agent. Barolo Chinato is the noble benchmark, and Antica Torino's version delivers that experience at a fraction of the price: the base is Langhe Nebbiolo DOP from Luigi Voghera, a respected Barbaresco producer in Neive — the same grape and region behind Barolo itself — fortified with neutral wheat distillate and infused with sixteen botanicals including cinchona, wormwood, gentian, elderflower, rhubarb, bay leaf, chamomile, marjoram, cinnamon, vanilla, coriander, rose, and nutmeg, rested in barrel with the spices dosed in the old vintage manner. Bottled at 18% ABV. Expect aromas of mulled wine and dried rose petals opening into prominent cinchona bitterness and gentian-driven citrus pith, subsiding into a long finish of nutmeg, allspice, and Mexican chocolate — with the gentian returning for one last curtain call. More bitter and less sweet than a typical sweet vermouth. Traditionally served after dinner with chocolate desserts (Piedmont's bonet is the classic pairing) or blue cheese, and a compelling swap for sweet vermouth in a Manhattan or Negroni.
