The 12 Year is Reisetbauer's flagship single malt and a genuine limited edition — batches run somewhere between 900 and 1,500 bottles, each numbered. It comes from the same uncompromising foundation as everything Hans Reisetbauer makes: organic barley grown on four hectares of the family farm in Axberg, Upper Austria, malted and fermented on site for 70 hours, then double distilled in a Christian Carl copper pot still designed to Hans's own specifications to retain an unusually high share of the original aroma. The maturation is what makes it unlike any Scotch. Rather than ex-bourbon or sherry wood, the spirit spends a minimum of twelve years in hand-selected casks from Austria's most celebrated winemakers, Heinz Velich and the Kracher family, that previously held Chardonnay and Trockenbeerenauslese — the intensely sweet botrytized dessert wine with the highest sugar concentration of any Austrian wine.
