Penelope 4 Grain Bourbon Whiskey
Penelope Bourbon was launched in 2018 by founder and CEO Mike Paladini to celebrate the coming birth of his daughter, Penelope, and the brand has since grown into a full lineup of blended and finished bourbons. This is the one that started it: the Four Grain, a blend of three different bourbon mash bills distilled at MGP in Lawrenceburg, Indiana, which together bring four grains into the bottle: corn, wheat, rye and malted barley. Penelope hand-selects the barrels and blends them into a single batch, using barrels with a #4 char on the staves and #2 on the heads, and the whiskey is non-chill filtered before it's bottled at 80 proof (40% ABV). The producer describes an aroma of balanced corn sweetness, caramel, light oak and syrup with slight savory notes, then sweet corn and syrup up front, fruit and candied sweetness through the middle, and a candied, sweet finish with a pleasant fruit aftertaste.
