Penelope Architect Bourbon Whiskey
Penelope Bourbon was founded in 2018 by Mike Paladini and named for his daughter, and Architect is the brand's French-oak finished expression, released in numbered builds. Like the rest of the Penelope range it starts with bourbon distilled at MGP in Indiana, blended across mash bills so that four grains end up in the bottle. Architect then gets a second stage of aging with French oak staves of two styles: a Delicate stave with low tannin and an Intense stave with medium tannin. Build 10, reviewed by Bourbon Obsessed, was a five-year-old bourbon with a mash bill of 75% corn, 15% wheat, 7% rye and 3% malted barley, non-chill filtered and bottled at 104 proof (52% ABV). That review found sweet cherry, butterscotch and maple on the nose, a palate of sweet cream, caramel candy, butterscotch, pepper and oak, and a long finish of deep caramel and coffee with a full, creamy mouthfeel, calling it a flavor bomb. With real proof and a dessert-like profile, it's built for sipping neat or with a few drops of water, and it holds up well in a stirred cocktail.
