Marc Darroze spent twenty years bottling some of the finest Bas-Armagnacs in Gascony under the family name before applying the same selector's eye to spirits from around the world — and this Barbados 5 Year is one of his most celebrated picks. The rum is Foursquare, from Richard Seale's distillery on the site of a 1636 sugar factory: a blend of pot and column still rums, pure and unsweetened as everything Seale makes, aged five years in Barbados. Then the Darroze twist — the casks travel to Gascony to finish in small barrels that previously held late-harvest Jurançon, the sweet Pyrenean white wine, adding a honeyed, pastry-like dimension to Foursquare's clean cane character. Bottled at 80 proof in a run of just 1,650 bottles.
