Batiste Gold takes the brand's Marie-Galante cane juice rhum and gives it a short, deliberate rest in used rye whiskey barrels in Napa, California — at least six months — enough to round the raw agricole edge and add color without burying the cane. Batiste is the only American rum made from single-origin fresh sugarcane juice rather than molasses, and the first with a carbon-negative production cycle, offsetting roughly three kilograms of CO2 per bottle. Founded in 2008 by spirits veterans Tristan Mermin and Jon Lawson, it sources cane grown, pressed, fermented, and distilled on Marie-Galante — the small island south of Guadeloupe inside the French agricole denomination — at a solar-powered plantation distillery, run once through a steam-heated column still with a copper top to preserve the cane's natural flavor. The Gold is bottled at 80 proof with no sugar, flavor, or color added. Expect fresh cane and cut grass on the nose softened by vanilla and a whisper of rye spice from the barrel, opening into a lightly oaked palate of sugarcane, lemon peel, toasted wood, and gentle pepper, with a cleaner, longer finish than the Blanc.
