Père Labat is the rhum of Distillerie Poisson on Marie-Galante, the small, flat, windmill-dotted island off Guadeloupe that many agricole drinkers consider the purest expression of French Caribbean cane. The distillery was founded in 1916 by Édouard Rameau and named for Père Jean-Baptiste Labat, the Dominican friar who modernized rum distillation in the French Antilles around 1700. Cane is cut by hand, crushed within hours, fermented slowly on fresh juice, and run through a red-copper Creole column. This is the distillery's organic cane, bottled straight off the column at 71% ABV with no reduction at all. Still strength is rare in agricole, and it shows you the spirit exactly as it condenses: dense, oily, and almost chewable, packed with green cane, ripe tropical fruit, and a wave of fermentation funk before a long peppery finish. Add water yourself, a few drops at a time, and watch it open up. A serious bottle for agricole obsessives.
