It's made in Santiago Matatlán, the mezcal capital of Oaxaca, from 100% espadín agave cooked in a traditional conical earthen oven over wood, fermented, distilled in small batches, and then rested about two months in oak barrels before bottling at 40% ABV, which lends a pale straw color and a softening of the smoke.
