The name honors Dr. Pierre Ordinaire, the French doctor credited with the first absinthe recipe in the 1790s, and the label recalls the Belle Époque formulas that made absinthe the drink of Paris cafés before the 1915 ban. It is built on the classic botanical set: grand wormwood, anise, sweet fennel, star anise, mugwort, lemon balm and peppermint, distilled and macerated from real plants rather than oils or essences. Two things set it apart from the strict traditionalists. It is bottled at 46% ABV rather than the 60-70% of most historic absinthes, and it is pre-sweetened, which technically makes it an absinthe liqueur under French law and means you can skip the sugar-cube ritual. Add cold water and it louches to a pale, cloudy green, with anise up front and wormwood bitterness drying out the finish.
