It comes from Berling S.A., one of the oldest operating rum houses in Haiti, co-founded in Port-au-Prince in 1862 by Labbé Barbancourt and still family-run by his great-grandson Herbert Barbancourt Linge, a central figure in Haitian rum and clairin. This is cane-juice rum in the agricole tradition: fresh juice from Madame Mueze, a low-yield local sugarcane varietal, spontaneously fermented with wild yeast and distilled on a Creole column still more than 60 years old. Then the unusual part — it's aged exclusively in a single ex-Cognac cask for 15 years, bottled at 43% ABV. Expect toasted vanilla bean, bananas Foster, honey, candied fruit, and hazelnut, with the Grand Champagne Cognac influence lingering on a long, elegant finish, the clairin funk long since mellowed into something genuinely refined.
