Granicera means "water witch" — the women healers of central Mexico who carried the botanical knowledge of the region for generations — and Taller Astrafilia in Mexico City named its gin line in their honor. The base is unusual: grain alcohol distilled from endemic corn varieties grown by farmers in the highlands of Chiapas, rather than the neutral wheat spirit most gin starts from. To it the distillery adds juniper and more than twenty regional plants sourced from farming villages around Mexico City, like Atlixco in Puebla — allspice, avocado leaf, cacao, damiana, lemon verbena, Mexican agastache, hoja santa, Mexican tarragon, and pápalo among the regional botanicals, with cardamom, chamomile, coriander, licorice, and nutmeg among the classics — all hand-processed and shade-dried to preserve their aromatic and medicinal properties. Perfil Cítrico is the citrus profile, bottled at 45% ABV, and it leads with Mexican lime and sun-ripened orange peel: expect a bright, zesty nose that reads like a citrus grove, opening into a palate where lime takes center stage with orange adding depth, the herbal Mexican botanicals underneath, and a clean, crisp finish with a subtle warming lift.
