Aviation is the gin that gave the world the phrase "New Western" — a style that pulls juniper back from the front of the stage and lets a fuller botanical cast share the spotlight. It was created in Portland, Oregon in 2006 by distiller Christian Krogstad of House Spirits and bartender Ryan Magarian, named for the Aviation cocktail, the early-1900s classic of gin, lemon, maraschino, and crème de violette. Then Ryan Reynolds bought in, became its most famous fan, sold the company to Diageo in 2020 for a reported $610 million, and stayed on as the face of the brand. The recipe is seven botanicals — juniper, cardamom, coriander, French lavender, anise seed, Indian sarsaparilla, and two kinds of orange peel — macerated 18 hours in neutral grain spirit and distilled in a single batch, bottled at 42% ABV. Wine Enthusiast scored it 97 points. The Gin Is In found dull juniper, wet boreal forest, lavender, and rooty earthy spice on the nose, then root beer, cinnamon, cassia, and cardamom on the palate, finishing floral with a hint of birch beer and flamed orange peel. Honest note: reviewers agree it's not for London Dry purists — if you want a juniper wall, look elsewhere.
