The palate brings Champagne, applesauce, and candied grapefruit peel with cocoa, allspice, star anise, and juniper, and the finish rides a wave of limestone, beach sand, and salt-water taffy through geranium, elderflower, and chamomile to a clean, gently bitter lime-peel fade.
