Fiji is one of the world's unsung rum nations, and the reason is a decades-long open secret: South Pacific Distillery in Lautoka, opened in 1980 by the Fiji Sugar Corporation, spent years selling bulk rum to Europe's finest independent bottlers, whose Fijian releases won award after award. Eventually Master Distiller Liam Costello decided the distillery should market its own — it cut nearly every bulk contract and built the Bati range, named for the fearsome warriors who protected the Fijian homeland. Bati Dark is a no-nonsense rum made from hand-cut cane grown in Fiji's rich volcanic soil, distilled with the island's famously pure water, and age-stated at two years but reportedly built on rums much closer to five; it's a pot-still-heavy blend with no additives, filtered through coconut-shell charcoal, and bottled at 80 proof. K&L called it a delicious rum at a great price — oily and funky, with treacle, banana bread, and stone fruit, drinking like a delicate, funk-forward Jamaican rum with unique character, and a great place to start if you've never tried Fijian rum.
