XO Mardi Gras is the top of the range from Louisiana's largest rum distillery — and the state's most celebrated holiday in a bottle. Bayou Rum is made by Louisiana Spirits in Lacassine, a town of about 150 people in the sugarcane country west of Lake Charles, from single-estate Louisiana cane and molasses from the oldest family-owned sugar mill in the United States, distilled by hand in copper pot stills. Introduced in 2019, XO Mardi Gras is the distillery's oldest and heaviest stock: aged up to five years in ex-bourbon barrels using the solera method, then finished a further year in Spanish Pedro Ximénez sherry casks, blended by Master Blender Reiniel Vicente and bottled at 40% ABV. It took Gold at the 2019 San Francisco World Spirits Competition, and the bottle itself is a decanter sealed with a cork topped by one-of-a-kind kaleidoscope tiles. Expect a dark mahogany pour with purple flowers, grape must, dried fruit, cedar, and thick baking spice on the nose, opening into orange marmalade, stone fruit, golden raisin, chocolate, vanilla, and tupelo honey, finishing long on black pepper, smoke, and the sherry itself. Paste found a lovely interplay of fruit and spicy oak; Drinkhacker noted the PX runs opulent, almost brandy-like, and dense enough that some will find it rich.
