Louisiana Spirits in Lacassine — a town of about 150 people in the sugarcane country west of Lake Charles, and easily the state's largest rum distiller — makes every batch by hand from single-estate Louisiana cane and molasses from the oldest family-owned sugar mill in the United States, distilled in copper pot stills. The Select is the distillery's amber flagship (now sold as Bayou Reserve): matured in wet ex-bourbon barrels for up to four years to pull extra bourbon character, and aged using the solera method so every bottle carries a thread of older stock for consistency, bottled at 40% ABV. Drinkhacker was smitten — a delightfully sweet, raisiny nose backed by a healthy slug of modestly aged wood, then an unexpected sherry-like citrus lift before caramel, molasses, cola, and baking spice, finishing on fresh berries, fig jam, nutmeg, and ginger; sweet throughout but incredibly well balanced and hard to put down. The distillery's own notes run rich oak, figs, red berries, and spice. It's a Louisiana-style pot still rum that genuinely rides the line between rum and bourbon, which makes it a natural in an Old Fashioned, a Rum Manhattan, or simply over ice — and a great bottle to hand a whiskey drinker who says they don't like rum.
