Peat Barreled Big Gin is what happens when Seattle's most juniper-forward craft gin spends time in barrels from Seattle's most celebrated single malt. Captive Spirits, founded in Ballard in 2012 by third-generation distiller Ben Capdevielle — who named the gin for his father, Big Jim — rests its flagship for four months in casks from Westland Distillery that previously held Westland's Peated Single Malt, and before that, Wild Turkey bourbon, making this the barrels' third life. The base gin is nine botanicals — juniper, coriander, bitter orange peel, grains of paradise, angelica, cassia, cardamom, orris, and Tasmanian pepperberry — over 100% corn, distilled in 100-gallon Vendome pot stills, bottled here at 47% ABV (94 proof). Drinkhacker found the peat understated but present: light smoke, menthol, and ginger on the nose, then a palate that stays in line with a classic unaged gin — juniper, coriander, cracked black pepper, earthy spice — with caramel and vanilla lingering on the finish as the bourbon history shows through; a hearty gin with a classic construction and just the right amount of spin. The Manual found it silky smooth with the faintest hint of peat, very little heat for the proof, and an excellent partner for anything from a simple soda to a complex cocktail.
