Rise is Castle & Key's spring gin — inspired by and distilled with botanicals from the blossoming fields surrounding the distillery in Millville, Kentucky, where Colonel E.H. Taylor's 1887 Old Taylor Distillery and its sunken gardens have been brought back from decades of ruin. Like every Castle & Key gin, it starts from rye whiskey new-make rather than neutral spirit — 63% rye, 20% malted barley, and 17% yellow corn from Walnut Grove Farm — which gives the gin an earthy, faintly grainy backbone that neutral-base gins can't match. That spirit is vapor-distilled through a custom Vendome dual-basket gin still with a springtime botanical bill: juniper and coriander for structure, then galangal root, Earl Grey tea, elderberry, lavender, wintergreen, and chamomile for the season. Bottled at 47% ABV (94 proof) in a limited spring release. Expect a fresh, floral nose — lavender and chamomile over bergamot from the Earl Grey — with a bright wintergreen lift, opening into a palate where galangal's gingery warmth and elderberry's dark fruit sit over the rye base and gentle juniper, finishing cool and clean.
