Charles Goodnight Bourbon is Foley Family Wines' whiskey, named for the 19th-century Texas cattleman who blazed the Goodnight-Loving Trail and invented the chuckwagon, and who was founder Bill Foley's great-great-uncle. The brand first appeared in 2017 as a 100-proof Kentucky straight bourbon; in 2023 Foley relaunched it as a Texas whiskey with a new recipe and higher proof, and this is that bottle. It is distilled and aged in Texas from a mash bill of 60% Texas-grown yellow #2 corn, 36% unmalted rye and 4% barley, triple distilled in a copper-lined Vendome pot still with no column distillate, then aged six years in charred American oak. It is bottled non-chill filtered at 115 proof (57.5% ABV). The high-rye recipe and the Texas heat show in the producer's own notes: apricot, peach and nectarine on the nose with toasty oak, caramel, vanilla and white pepper; a viscous palate of caramel, honey, cream soda, toasted nuts, dark chocolate and baking spice; and a medium-long finish of toasted hazelnut and honey. Six years old and 115 proof puts it well above most Texas bourbon on both age and strength.
