Claridad means clarity, and the brand was founded as the antidote to what Mexicans call conejo brands — rabbit brands, the startups that hop into mezcal and out again. Francisca D'Acosta and Ofer Levy built it around one mezcalero: Onofre Ortíz Ortíz, a fifth-generation agave farmer and distiller in Bramaderos, Miahuatlán, Oaxaca, and the son of the legendary Don Beto Ortíz. His flagship Espadín is made the way his family has always made it: 100% espadín cooked for three days in an oak-fired conical stone oven, milled with axe, machete, and a small mechanical grinder, fermented in cypress-wood tinas with ambient yeast and well water, and double-distilled in an alembic copper pot still. Every batch is labeled with its details; check yours for ABV and production date. Leon & Son describe it as dry, herbaceous, and floral with a touch of tropical fruit: mild aromas of soft clay, burnt cinnamon, subtle tropical fruit, delicate fresh herbs, and green banana, then a surprising, bold palate of jasmine, parsnip and yam, coriander, yellow flowers, and a hint of char.
