Gaspare Campari was tending bar by age 14, and by 1860 he'd developed the bittersweet red aperitif that would eventually carry his name, first in the cellars of his own Caffè Campari in Milan, later made famous when he moved the business to the city's grand Galleria Vittorio Emanuele in 1867. The recipe — a secret blend of around 60 to 68 herbs, roots, aromatic plants, and fruit peels, including gentian, quinine bark, and bitter orange — has reportedly remained unchanged since. One genuinely fascinating historical detail: Campari's signature ruby-red color came from real carmine dye, made from crushed cochineal insects, right up until 2006, when the company finally switched to artificial coloring while keeping everything else the same. Expect an intensely aromatic nose of bitter orange peel, cherry, rhubarb, and grapefruit zest, with a bittersweet palate balancing quinine dryness against light sweetness and blood orange, finishing long, bitter, and faintly medicinal, with a dusty herbaceous quality that only grows more pronounced when diluted. Bottled at 24-25% ABV.
