Coppercraft Distillery was founded in 2012 by Walter and Kim Catton in Holland, Michigan, opening its production floor and tasting room the following year in a former Belden Brick and Supply building. The couple started it after Walter was struck by an SUV while training for an Ironman in 2009, a turn that sent them toward building something of their own. The distillery runs a 350-gallon copper Vendome still from Louisville and later added a 750-gallon still to double production. Its Straight Bourbon Whiskey is a blend built from barrels of sourced bourbon, pairing whiskey aged four-plus years with a portion of nine-plus-year-old stock to add depth and round out the younger component. What sets it apart is the finishing: Coppercraft uses brandy-style blending and proofing, bringing the whiskey down to strength gradually over about three months from barrel to bottle rather than cutting it all at once, a slower approach meant to let the blend integrate.
