Dry Fly Distilling in Spokane was the state's first craft distillery since Prohibition, founded on a grain-to-glass principle that runs from the base spirit through every botanical: locally grown, sustainably farmed, all from the Pacific Northwest. The gin starts with the distillery's own wheat vodka, then adds a botanical bill nobody else had tried — juniper and coriander, yes, but also lavender, fresh mint, dried Fuji apples, and Washington hops — distilled in custom-built pot stills. It won Gold at the New York World Wine & Spirits Competition and Silver at the San Diego International Spirits Competition, and the Ultimate Beverage Challenge rates it strongly recommended. Spirits Review found a juniper-and-lavender bouquet overlaid with an intriguing blanket of apple and hops, giving it genever-like aromas with the bite of fresh mint — tasting more like a genever with citrus, lavender, and apples than a London Dry: very complex, aromatic, wonderful, with a dry, minty finish and no burn.
