Demerara Distillers Limited makes it at the last distillery in Guyana, at Plantation Diamond on the Demerara River, where the country's heritage stills were consolidated: the 5 is a blend of rums from the house's Coffey and Savalle column stills with a touch of wooden-still distillate, distilled from molasses, tropically aged a minimum of five years in ex-bourbon oak, and bottled at 40% ABV. Since 2020 DDL has reformulated the range with the added sugar removed or sharply reduced. Inu A Kena's readers pair the 5 with the 12 in profile — the bright, fruity, approachable side of the family — as opposed to the heavier 8 and 15. Expect a golden pour with a nose of caramel, vanilla, banana, and light molasses with a faint hint of the Demerara wooden-still funk, opening into a smooth, medium-bodied palate of toffee, dried fruit, and gentle oak, finishing warm and moderately long.
