El Dorado 25 is DDL's halo rum — a quarter-century of tropical aging on rum from the oldest stills in the world, released in numbered vintages. Demerara Distillers Limited makes it at the last distillery in Guyana, at Plantation Diamond on the Demerara River, where the country's heritage stills were consolidated: the 25 is a blend from the Enmore wooden Coffey still, the Port Mourant double wooden pot still, and the Versailles single wooden pot still, tropically aged a minimum of twenty-five years in ex-bourbon oak — an angels' share so severe that only a fraction of each cask survives — and bottled at 43% ABV in a wooden presentation box; check your label for the vintage year. Twenty-five years in Guyana's heat is extreme: expect a very dark, almost black pour with a nose of dried fig, prune, molasses, pipe tobacco, leather, dark chocolate, and heavily toasted oak, opening into a dense, layered, oak-driven palate where the Port Mourant funk has mellowed into something savory and smoky, with dried fruit, coffee, and spice, finishing extremely long and dry. Honest note: The Lone Caner, an admirer of the range, calls the 12 better value than the 25 — at this age the wood dominates, and this is a collector's and special-occasion bottle priced accordingly, for drinkers who already love the 15 and 21. Since 2020 DDL has reformulated the range with the added sugar removed. In a snifter, neat, slowly, on a night that deserves it.
