Fair Gin

FAIR was founded in 2009 by Alexandre Koiransky as the world's first Fair Trade certified spirits company, and the gin is built on its award-winning quinoa vodka — distilled from seeds grown by more than 1,200 independent Andean farmers in the Bolivian Altiplano, who are paid 15% above market price, with a further percentage of revenue returned to the growing communities. The gin's defining ingredient is just as deliberate: it's the first distilled gin made from Uzbek juniper berries, hand-picked in a nature reserve near Samarkand by the Dustkul Bogi cooperative in a region where most farmers live below the poverty line. Those berries join a deliberately short botanical bill so nothing crowds them out — Moroccan lemon, angelica root, cardamom, coriander, and timut pepper, all organic and Fair Trade certified — macerated a full week in the quinoa base, then distilled in small 200-liter batches on a hand-made Stupfler copper alembic at FAIR's micro-distillery in Cognac and proofed with demineralized Cognac-region water to 42% ABV. It took Gold at the 2021 Gin Masters in London. Gin Foundry found unmistakable juniper leaping forward with a herbal, earthy quality, the musky cardamom and spice kept firmly on a leash; the current recipe reads brighter, with baked lemon bar on the nose and clean citrus over juniper and coriander on the palate, finishing fresh with a hint of pepper and a lasting savory feel. Excellent in a Negroni or a Gimlet, and honest enough to drink neat.
