Único is mezcal without smoke — and Mezcal Reviews found it the perfect bottle for tasting what espadín is like underneath. Fidencio Jiménez began making mezcal over a century ago in Santiago Matatlán, and the palenque is now run by his great-grandson, fourth-generation maestro Enrique Jiménez, from estate-grown agave; the family also makes El Buho. For Único, Enrique built a custom oven that cooks the agave with steam-powered radiant heat rather than a smoky earthen pit, so the espadín roasts clean; it's then tahona-crushed, fermented with native yeast in pine vats for seven to thirteen days, and double-distilled in a 300-liter wood-fired copper pot, bottled at 44.5% ABV (89 proof). Mezcal Reviews found a mezcal prepared like a tequila — a very pure expression of the agave — with the espadín releasing more sharp bite and complexity than blue agave does; slightly sweet, with charcoal, green apple, and pear on the nose, running from faintly smoky into ripe fruit. Cream Wine: pear and kirsch on the nose, robust espadín and a strong sense of earth on the palate, a soft, spicy, lingering finish. Honest note: if you want smoke, this isn't it — that's the point, and it's the bottle to hand a tequila drinker who says they don't like mezcal.
