Garrison Brothers is the first legal whiskey distillery in Texas, founded by Dan Garrison in Hye in 2006; the wheated mashbill — 74% Panhandle corn, 15% soft red winter wheat, 11% malted barley — ages in small barrels through Hill Country summers that top 100°F. Balmorhea, named for the West Texas spring-fed pool, takes that whiskey and re-barrels it in fresh charred oak for a fifth year, doubling the wood on a spirit that already gets more than most, and bottles at 115 proof. The Whiskey Wash: sweet cedar, brown sugar, dark cherry, and pipe tobacco on the nose; nutmeg, then a sweet shop of milk chocolate, candied walnut, and caramel sauce on a pleasantly syrupy palate, with cherry cola and black-tea tannin developing; and a medium-long finish with a saline, savory note. The Whiskey Finish and Breaking Bourbon both put it at the top of the Garrison range. Honest note: the most oak-forward bourbon in Texas and the one the state's enthusiasts argue is the best thing the distillery makes — for the drinker who thinks Kentucky is too polite.
